1. New York Strip Steak with Garlic Butter & Onions
Ingredients:
- New York strip steaks – 2
- Onion -1( cut into thick circles or strips)
- Garlic – 3 cloves
- Butter – 1 tablespoon
- Salt – 1 teaspoon
- Freshly ground black pepper – 1 teaspoon
- Ground cumin – 1 teaspoon
- Ground coriander – 1 teaspoon
- Paprika – 1 teaspoon
How to prepare:
- Heat the grill on medium-high heat; before placing the steaks on the pan for at least two minutes.
- Mix the dry spices in a bowl.
- Rub the spice mix on each side of steaks.
2. Filet Mignon in Mushroom Wine Sauce
Ingredients:
- Unsalted butter – 4 tablespoons (divided)
- Olive oil – 2 tablespoons (divided)
- Baby Bella mushrooms -16 ounces (thickly sliced)
- Yellow onion – 1 small or ½ medium (finely diced)
- Garlic cloves – 4 medium (minced)
- Chopped fresh thyme – 1 tablespoon
- filet mignon steaks (about 1½-inch thick) – 4 (6 ounces each)
- Merlot – ½ cup
- Low sodium beef broth – 1½ cups
- Heavy whipping cream – ½ cup
- Salt and Pepper to taste
How to prepare:
- Place a heavy-bottomed pan over medium/high heat.
- Melt two tablespoons butter and add one tablespoon oil.
- Add mushrooms and cook them for about five minutes.
- Stir in onion and cook for another 3 minutes.
- Press in garlic cloves. Season with ¼ teaspoon pepper, ¼ teaspoon salt, and one tablespoon fresh thyme.
- Cook for another 2 minutes, continually stirring until the garlic is fragrant.
- Transfer mushroom mixture to a plate. Use a wet paper towel or tissue to wipe the skillet clean.
- Pat dry the steaks with a paper towel, seasoning all over with ¼ teaspoon pepper and one teaspoon salt.
- Place that same pan over medium/high heat, add one tablespoon oil and two tablespoons butter.
- Add seasoned steaks to the skillet when butter is hot and finished foaming, saute, turning over once with tongs about 3-5 minutes every side for a medium-rare finish. Reduce the heat if steak is browning too fast.
- Add ½ cup merlot and boil until it is reduced by half. Scrap the bottom with a spatula and deglaze the pan.
- Pour 1½ cups broth and boil it until about ⅔ cup liquid remains.
- Add ½ cup cream and boil it until sauce thickens slightly.
- Return steak and mushrooms to the pan. Heat it until warmed through.
- Season the sauce to taste with more pepper and salt if desired.
- Serve the steaks in the plate with mushrooms.
3. Surf and Turf for Two
Ingredients:
For Herb oil
- Fresh parsley – ¼ cup (chopped)
- Fresh chives – 2 tablespoons (chopped)
- Extra-virgin olive oil – 2 tablespoons
- Kosher salt and freshly ground Pepper
For the surf and turf
- Jumbo shrimp – 6 (peeled and deveined, tails intact)
- Extra-virgin olive oil – 2 tablespoons
- Juice of ½ lemon
- Fresh thyme – 2 teaspoons chopped ( plus 2 to 3 sprigs)
- Freshly ground Pepper
- Pancetta – 6 slices (about 2 ounces)
- Beef tenderloin, trimmed – 1 (10-ounce) piece
- Sea salt
- Asparagus spears – 8
- Unsalted butter – 1 tablespoon
How to prepare:
- Make the herb oil: Pulse the chives, parsley and olive oil in a mini food processor until smooth. Thin with water, if necessary. Add ¼ teaspoon each of Pepper and salt. Transfer to a small bowl, cover it, and set aside.
- Prepare surf and turf: Toss the shrimp, lemon juice, olive oil, pepper and chopped thyme in a bowl.
- Wrap the shrimp with a piece of pancetta.
- Preheat the broiler. Arrange the shrimp on a foil-lined broiler pan.
- Season the beef with pepper and sea salt.
- Press the thyme sprigs into the meat. Set it aside.
- Snap off the tough end of each and every asparagus.
- Put it in a microwave-safe dish with ¼ cup water and a pinch of sea salt.
- Heat a medium-sized ovenproof skillet over high heat. Add the butter.
- When the foam subsides, sear the beef about 3 minutes per side. Hold the meat and brown the sides using tongs.
- Transfer the skillet to a broiler and cook until the thermometer inserted into the beef registers 125º Fahrenheit for medium-rare, about four more minutes.
- Transfer this to a cutting board for resting while you cook the shrimp.
- Broil the shrimp about 2 minutes per side, or until the pancetta is crisp.
- Meanwhile, microwave the asparagus for about 2 minutes. Slice the beef into four pieces. Serve it with the shrimp, asparagus and herb oil.
